Autumn Baked Apples

Apples are a wonderful source of fibre and polyphenols which are great for gut health. We have a very ancient apple tree in our garden, that every year delivers a great supply of Cox apples. I've stored many of them but these were the last of the stragglers on the tree. I had them for breakfast with a dollop of Greek yogurt and sprinkling of cinnamon, but they also make a great dessert.

Baked apples with cinnamon and hazelnuts

Preheat oven to 180c

Wash and core each apple and place on a baking sheet.

Sprinkle with 1 handful chopped hazelnuts, 1-2 teaspoons coconut sugar or maple syrup, 1 teaspoon cinnamon and 2 tablespoons water. Loosely cover with foil and bake in the oven for 30 minutes, then remove the foil and cook for a further 10 minutes. Allow to cool slightly before enjoying with yogurt and more cinnamon. I like mine with a sprinkling of thyme leaves too :)
